This talk will describe the properties and behavior of drops on one fluid in a second fluid and their role in biophysics as well as their utility in biotechnology. I will describe new ways of probing the properties of drops of concentrated proteins that form within cells through a phase separation process using dynamic light scattering methods. I will also describe the use of small drops as reactor vessels for performing experiments to explore the fitness landscape of evolving enzymes and their utility in improving the performance of the enzymes through directed evolution.
